Tina r\u00e4korna och skala dem. Skala l\u00f6ken, sk\u00e4r den i t\u00e4rningar och fr\u00e4s n\u00e5gra minuter i sm\u00f6ret. R\u00f6r ner mj\u00f6let och sp\u00e4d med vatten och vin (eller vatten + citronsaft) under omr\u00f6rning. Smaks\u00e4tt med fond, saffran och vitl\u00f6k. Tills\u00e4tt cr\u00e8me fra\u00eeche och r\u00e4kor och l\u00e5t s\u00e5sen bli genomvarm. (F\u00e5 saker kallnar s\u00e5 snabbt som pasta.) F\u00f6rdela spenaten i botten p\u00e5 tallrikarna. L\u00e4gg p\u00e5 en h\u00f6g pasta och skeda \u00f6ver r\u00e4ks\u00e5sen.
