L\u00e5t laxen st\u00e5 framme i rumstemperatur medan du f\u00f6rbereder grillen. Salt- och sockerblandningen kommer under tiden att sm\u00e4lta ner \u00f6ver laxen och ge den en l\u00e4tt gravning. S\u00e4tt fyr p\u00e5 grillen och l\u00e5t gl\u00f6den l\u00e4gga sig ordentligt. Det f\u00e5r absolut inte brinna i grillen. Gallret ska vara n\u00e4st h\u00f6gst upp.  L\u00e4gg i de bl\u00f6ta r\u00f6ktr\u00e4bitarna n\u00e4r temperaturen b\u00f6rjar n\u00e4rma sig 140 grader och l\u00e4gg p\u00e5 locket. \u00d6ppna spj\u00e4llen till h\u00e4lften. Det kommer nu att utvecklas ordentligt med r\u00f6k i grillen, allts\u00e5 perfekt tid att l\u00e4gga in plankan med laxen. L\u00e5t laxen ligga under lock i grillen i cirka 45 minuter. Mixa vattenkrassen, persiljan, vin\u00e4gern och citronsaften till en sl\u00e4t, gr\u00f6n pur\u00e9. L\u00e4gg i \u00e4ggulan och tills\u00e4tt oljan i omg\u00e5ngar medan du mixar. H\u00e4ll slutligen i gr\u00e4dden och mixa tills den b\u00f6rjar tjockna l\u00e4tt. Konsistensen ska p\u00e5minna om rinnig milkshake.
