Skala dem och spara till senare. Enklast \u00e4r att trycka in kanterna p\u00e5 stj\u00e4rten och bryta upp f\u00f6rsiktigt. L\u00e4gg skalen med huvud och allt i en kastrull och t\u00e4ck med vatten. L\u00e5t koka i cirka 20 minuter. Sila fr\u00e5n skalen och l\u00e5t fonden koka ihop tills bara 1 dl \u00e5terst\u00e5r. H\u00e4ll i balsamvin\u00e4ger och koka ihop ytterligare tills 1\/2 dl \u00e5terst\u00e5r. Ta kastrullen fr\u00e5n v\u00e4rmen och vispa ner 50 g sm\u00f6r i omg\u00e5ngar tills du f\u00e5r en lagom tjock konsistens. Vik \u00f6ver nederkanten s\u00e5 att den t\u00e4cker kr\u00e4ftorna och svampen, vik in kortsidorna och l\u00e5s paketet med ovandelen. Limma med lite vatten. G\u00f6r samma sak med de \u00f6vriga rullarna. Stek sedan rullarna i lite olivolja i het panna, cirka 1 minut p\u00e5 varje sida.
