L\u00e4gg ankbr\u00f6sten med skinnsidan upp\u00e5t, snitta skinnet i sm\u00e5 rutor. Salta och peppra. Hetta upp oljan i stekpannan, stek ankbr\u00f6sten, skinnsidan f\u00f6rst. V\u00e4nd och \u00f6s n\u00e5gra g\u00e5nger under tiden. L\u00e4gg \u00f6ver p\u00e5 smord eldfast form. Stek vidare i ugnen i 6-8 minuter. \u00d6s n\u00e5gra g\u00e5nger. Ta ut ankbr\u00f6sten. Svep in i folie. L\u00e5t vila cirka 10 minuter. Sk\u00e4r upp br\u00f6sten i skivor p\u00e5 snedden.
