L\u00e5t det koka tills sockret kristalliserar sig, det vill s\u00e4ga blir torrt. Nu ska sockret sm\u00e4lta och bli brunt. R\u00f6r om hela tiden. N\u00e4r det b\u00f6rjar kn\u00e4ppa drar du av kastrullen igen och forts\u00e4tter r\u00f6ra tills sockret har sm\u00e4lt. Om inte allt socker sm\u00e4lter, st\u00e4ll tillbaka kastrullen n\u00e5gra sekunder p\u00e5 plattan igen f\u00f6r att f\u00e5 upp v\u00e4rmen p\u00e5 n\u00f6tr\u00f6ran. Bred ut n\u00f6tterna p\u00e5 ett bakpl\u00e5tspapper och l\u00e5t dem svalna.
