L\u00e5t k\u00f6ttet vila i folie medan du kokar s\u00e5sen. M\u00e4t upp skyn och tills\u00e4tt vatten s\u00e5 att det blir ca 1  1\/2 dl. H\u00e4ll det i en kastrull tillsammans  med vin, gr\u00e4dde, kalvfond och soja. L\u00e5t det koka n\u00e5gra minuter. Tills\u00e4tt Maizenaredningen under omr\u00f6rning. L\u00e5t s\u00e5sen koka upp p\u00e5 nytt. Smaka av med salt och peppar. Ta bort sn\u00f6ret och sk\u00e4r k\u00f6ttet i skivor.
