Tills\u00e4tt l\u00f6k, morot, vitpeppar, lagerblad och dillkvistar. L\u00e5t k\u00f6ttet sjuda under lock tills innertemperaturen p\u00e5 k\u00f6ttet \u00e4r 80\u00ba, ca 1 1\/4 timme. Red av buljongen med vetemj\u00f6let skakat med lite vatten i en redningsb\u00e4gare (eller ihopvispat i en kaffekopp). Vispa ner redningen. Smaks\u00e4tt s\u00e5sen med \u00e4ttiksprit eller citronsaft, str\u00f6socker, salt och peppar. Nu f\u00e5r s\u00e5sen inte koka mer. Tills\u00e4tt dillen strax f\u00f6re serveringen, annars blir den gr\u00e5 av syran i s\u00e5sen. Sk\u00e4r upp k\u00f6ttet i stora t\u00e4rningar och l\u00e4gg ner i s\u00e5sen.
