Sl\u00e5 den varma vaniljmj\u00f6lken \u00f6ver \u00e4ggvispet och h\u00e4ll sedan tillbaka allt i kastrullen. V\u00e4rm till 85\u00ba under st\u00e4ndig omr\u00f6rning med en tr\u00e4slev. Sila s\u00e5sen genom finmaskig sil och kyl den snabbt i kallt vattenbad.
